  1. Prepare 1 large portabella mushroom per person
  2. Take 2 garlic cloves, minced
  3. Make ready 1-2 fresh tomatoes, chopped
  4. Take 1 lb baby spinach
  5. Get 1 small onion, diced
  6. Prepare 1 mushroom stems, removed from mushrooms, chopped
  7. Make ready 1 salt & pepper to taste
  8. Prepare 1 olive oil, to drizzle
  9. Get 1 freshly grated parmesan & asiago cheeses enough for tops of mushrooms
Instructions to make Stuffed Portabella Mushroom:
  1. Preheat oven to 350°
  2. Remove stems from mushrooms, set aside, with a spoon, scrape gills off the mushrooms. Drizzle olive oil over each mushroom season with salt and pepper.
  3. In a saute pan heat about 2 tablespoons of olive oil, add garlic, tomatoes, mushroom stems & onions, cook a few minutes add & spinach cook 5 minutes.
  4. Place filling into each mushroom, top with cheeses, bake for 15 min, Enjoy ;)
