  6. Bake the bread loaves for 55 minutes, turing once halfway until toothpick poked in the middle comes out clean. (Bake muffins for 20 minutes, turning pans once).
  7. Let bread or muffins cool thoroughly. These freeze well, also.

I made a loaf this morning and after tasting it, immediately set out to make another. I have some drained zucchini left from a regular recipe and now want to make these.
