The ingredients needed to make Pav Bhaji:
  1. Make ready 300 gms boiled, peeled and roughly smashed potatoes
  2. Get 1/2 tsp Whole coriander seeds
  3. Prepare 50 gms French Beans
  4. Prepare as needed Fistful of shelled Fresh peas
  5. Make ready 50-55 gms carrot chopped
  6. Prepare 30 gms Small Red Bell Pepper chopped (optional)
  7. Make ready 90-100 gms onion chopped
  8. Make ready 120 gms tomatoes
  9. Make ready 2 green chillies chopped
  10. Prepare as required Little green coriander leaves chopped
  11. Prepare 2 tbsp Veg oil
  12. Take 1 tbsp Butter
  13. Prepare 1.5 tsp Chaat masala
  14. Take 1/2 tsp Black Rock salt
  15. Get as required Hot water
  16. Get Dry spices
  17. Make ready 1 tsp Cummin/Jeera powder
  18. Take 1 tsp Coriander/Dhania powder
  19. Prepare 1/2 tsp Garam masala powder
  20. Make ready 1/4 tsp Turmeric Powder
  21. Prepare 1.5 tsp Kashmiri Red chilli powder
  22. Get 1/2 tsp Garlic powder (you can use fresh too)
  23. Prepare 1/2 tsp Ginger powder (you can use fresh too)
  24. Get For serving
  25. Get As per requirement Pav Buns as needed toasted in Butter
  26. Prepare as required Onion chopped/ sliced
  27. Make ready as required Green Coriander Leaves chopped
  28. Prepare as required Lemon wedges
  29. Make ready As required Dollops of Butter
Instructions to make Pav Bhaji:
  1. Prepare the ingredients- vegetables as needed, mix & soak the dry spices in little water and make it like a paste. Peel the boiled potatoes and roughly smash it.
  2. Now take oil and butter in a pan or kadai and first add while dry coriander seeds,once it crackles add onion and saute till its translucent, then add the vegetables except the bell pepper, tomato and potato and cook for 5-10 minutes…then add the bell pepper and the spice paste and cook for 5 minutes or so….add water when required. Add the tomatoes and cook till it soften and cook. Add in little Coriander leaves too while it cooks. It gives a nice flavour to the Bhaji.
  3. Add the smashed potatoes and mix well and then add water as needed may be about a cup. Cover and cook for about 10 minutes. Check consistency, it should neither be watery nor dry, check salt and add if needed.Once done….serve hot with a dollop of butter, onion, chopped coriander leaves and lemon wedges accompanied with warm butter toasted Pav Buns.
