Make it in the Instant Pot or on the stovetop! Twenty twenty has been an odd year, that's for sure. However, even though the year has been… not great… Combine the Kimchi, Squid, Chilli Paste, Sugar and Chicken Stock into the pot. A combination of miso paste, kimchi, shrimp and shiitake mushrooms, gives this soup a super complex flavor.

The ingredients needed to make Seafood Kimchi Soup:
  1. Make ready 200 g Squid
  2. Take 2 cups Kimchi
  3. Make ready 2 tbsp Chilli Paste
  4. Get Sugar and Salt for taste
  5. Get Water
  6. Take 2 Stalks Green Onions, chopped
  7. Prepare 2 Packages Soft Tofu
  8. Prepare 1 Cup Chicken Stock

Add strained broth, zucchini, onion, kimchi, serrano chile peppers, ginger, fish sauce, and sugar. Add broth, soy sauce, and gochujang; bring to a boil. Sprinkle with Korean chives, if desired. Sundubu jjigae is a Korean stew made with soft (uncurdled) tofu as a highlight ingredient.

Steps to make Seafood Kimchi Soup:
  1. Combine the Kimchi, Squid, Chilli Paste, Sugar and Chicken Stock into the pot.
  2. Add water and boil for 30 minutes or so.
  3. Add the chopped tofu and boil for another 10 minutes. Add some salt for taste.
  4. Finally add the Green Onions into the pot and turn off the heat. Serve while its hot.

Sprinkle with Korean chives, if desired. Sundubu jjigae is a Korean stew made with soft (uncurdled) tofu as a highlight ingredient. There are a few different ways to make sundubu jjigae using different ingredients (e.g. kimchi, minced pork and seafood) but by far my favorite version is the seafood version known as Haemul Sundubu Jjigae (해물 순두부 찌개). Set a heavy-bottomed soup pot over medium heat. Kimchi Jjigae (김치찌개) also known as Kimchi stew or Kimchi soup is probably the most common way of consuming some aged Kimchi.
