  1. Make ready 1⁄2 large Cucumber
  2. Get 2 cups plain Greek yogurt
  3. Make ready 3 tablespoon Dill, finely chopped
  4. Make ready 1tablespoon Mint, finely chopped
  5. Take 1small Shallot, finely minced
  6. Make ready 2 cloves Garlic, crushed
  7. Prepare 1tablespoon fresh Lemon juice
  8. Take 1/2 teaspoon Black Pepper, crushed
  9. Get 1tablespoon Olive oil
  10. Take as needed Paprika, for garnish
  11. Take as per taste Kosher Salt
Steps to make TZATZIKI (Cucumber Yogurt Dip):
  1. Grate the cucumber add to it the minced shallot and toss with some salt. Set it aside for 5 minutes to ooze out the cucumber juice. The salt helps to draw out moisture from the cucumber.
  2. In the meantime, chop the greens – dill, mint and crush the garlic. - Now squeeze excess water from the cucumber, else the sauce will be runny. To this add crushed garlic.
  3. Transfer the Greek yogurt in a bowl and give a gentle mix. Greek yogurt is nothing but the thick yogurt. If you feel your yogurt is not thick, let it rest in a strainer for an 1 hour to drain off any water.
  4. Now add the chopped greens and season with lemon juice, pepper and salt. Mix it all together and voila. To serve it, add a touch of extra-virgin olive oil for flavor and shine and sprinkle with paprika. Serve it with pita bread or fresh cut vegetables
