  4. Fold the right side over the left. Wrap in plastic wrap and refrigerate for at least 30 minutes. This will firm up the roll so it will be easy to cut.
  5. Preheat oven to 425F.
  6. Take the roll out of the fridge and remove the plastic wrap. Cut the roll into 1'' thick cookies and place them at least 2'' apart on a baking sheet covered with parchment paper. The puff pastry will expand a fair bit.
  7. Bake for 18-20 minutes.
