Add the peas in the pan just before the end of cooking time then Drain and set aside In a frying pan, heat the oil and then fry the onion until soft and a little golden. Add the curry paste and mustard seeds and fry for a few more minutes until fragrant Place the pasties on the lined tray, brush the surface of the pastry all over with the egg wash and add a sprinkle of sea salt. Serve either while still warm or at room temperature with a spoonful of mango chutney These curried cauliflower and potato pasties are classic British comfort food made with an Indian spiced tomato, potato, and cauliflower filling encased in flaky hot water pastry. Curried Potato & Pea Pasties These pasties make a great meal or snack & you can make them as spicy as you like depending on what curry powder you favour!

Instructions to make Curried Potato Pastie:
  1. Heat a large pan of water - TIP.Heat the water in a kettle first then heat it - Add the potatoes and cook for 8mins until just soft. Add the peas in the pan just before the end of cooking time then Drain and set aside
  2. In a frying pan, heat the oil and then fry the onion until soft and a little golden. Add the curry paste and mustard seeds and fry for a few more minutes until fragrant
  3. Carefully stir in the potatoes and peas, trying not to mash the potatoes. Mix well then add the lemon juice and coriander and leave it to cool for 10-15 mins
  4. Heat the oven to 200°C/ fan 180°C. Unroll the pastry. And roll out the dough on a floured surface 20cm by 20cm. Then cut them into 4 squares. Add the filling on to the pastry and close into packets. Add egg wash on to the pastry and Heat in the oven for 20 mins until puffed and golden. You can serve with fresh salad
