Bring mixture to a simmer and cook until the chicken is no. In a large pot over medium high heat, add the butter and olive oil. Sprinkle in the flour to create a roux and cook for another minute. Discard the skin and bones from the chicken breasts. Hearty chicken and vegetable stew is amazingly flavorful.
