In a large saucepan, bring rhubarb and water to a boil. Add sugar and cinnamon; return to a boil. Using a slotted spoon, remove the rhubarb from the liquid, and transfer to a medium bowl; set aside. DIRECTIONS Place the rhubarb, sugar, water and lemon juice into a medium saucepan set over low heat and cover.

Steps to make Stewed rhubarb:
  1. Turn on a heat at medium, add rhubarb, braw sugar, lemon juice and water into the pot
  2. Cover and bring to a simmer. Cook, covered, stirring occasionally, for 8-10 minutes or until the rhubarb is very soft. (Keep stirring occasionally) Done!

However, this recipe pairs it with sugar and ginger to makes a delicious compote! This stew can then be eaten by itself or served over low FODMAP ice cream, pancakes or in muffins. But remember don't eat the leaves as they contain a poisonous chemical called oxalic acid!! Put the stewed rhubarb, egg, flour, baking powder, cinnamon, vanilla, oil and sugar in a bowl and gently combine. You want it well-mixed, but ideally don't want to break up all the rhubarb.
