On lightly floured surface, roll out half of the pastry and line a nine-inch pie plate. Strawberry-Rhubarb Pie Strawberries + rhubarb = a match made in heaven!   3. Combine all ingredients for filling and pour into bottom crust.
  4. Roll out remaining dough and top pie. Trim off excess dough about an inch from edge. Tuck and flute edges. Make several slits in top crust for vents.
  5. Place pie dish on a parchment lined baking sheet in case of bubble-over.
  6. Bake for 60-70 minutes or until top crust is golden. (I made this one for my brother-in-law's birthday, hence the initials lol)

This pie has wonderful flavor, the assertive tang from the rhubarb perfectly balanced by sweet, ripe strawberries. Tangy and colorful, this pie is the essence of summer. Pie looked beautiful but when sliced open reviled strawberry rhubarb soup. Flavor was good but the crust became soggy as the pie cooled. Very disappointed, as this is now destined to become raccoon food out in the brambles.
