Yet another crustless quiche that is designed for a low-carb, high-fat (LCHF) diet. It is very rich and cheesy. The Parmesan and butter on the bottom form a nice skin on the bottom that really helps. The egg and cream mixture is quite flexible and the ratio of egg to cream and the heaviness of the cream is a personal choice.

The ingredients needed to make Crustless quiche:
  1. Prepare 2 Turkey sausage links sliced thin
  2. Take 2 1/2 cup shredded cheese- I used Mexican blend, parmesan and mozzarella
  3. Prepare 5 eggs- lightly beaten
  4. Get 1/2 medium onion - diced
  5. Make ready 2/3 cup mushrooms - chopped
  6. Prepare 1 garlic powder to taste
  7. Take 2 Roma tomatoes - diced, I left a few whole rings to place on top as decoration
  8. Make ready 4 broccoli florets diced small
  9. Take 3/4 cup fresh spinach leaves- chopped and pressed btwn paper towels to absorb excess moisture
  10. Make ready 1 fresh Mexican tarragon leaves- left a few springs to add to top
  11. Take 1 salt
  12. Prepare 1 black pepper
  13. Get 1 additional seasoning if preferred - I added a lil 21 salute seasoning from trader joes
  14. Make ready 2 tsp canola oil

It's a creamy, satisfying simple egg casserole, sans crust — avoiding what seems to be everyone's nutritional bugaboo these days: starch and carbs. Add salt and pepper to taste and any other spice to taste (garlic powder, onion, cumin, etc.). Traditionally, quiche has a crust and a frittata does not (unless you are making crustless quiche, of course). Frittatas are first cooked on the stovetop and finished in the oven, whereas quiches (like this crustless quiche) are baked entirely in the oven.

Instructions to make Crustless quiche:
  1. Saute onions with a little oil until they begin to turn translucent then add mushrooms. Sprinkle garlic powder on top. Stir occasionally. Once mushrooms are cooked down remove from pan. I put them on a paper towel to absorb the oil and remaining moisture.
  2. Mix the lightly beaten eggs and 11/2 cups of cheese, reserving some for later. Add salt, pepper and any additional seasoning to mix.
  3. Spray oil to coat baking dish/es. I make mine in 2 half quart dishes but would work distributed in ramikens or in a pie dish. If, using one dish, stir all ingredients together and pour into dish. If putting in smaller dishes I recommend dividing dry ingredients evenly btwn dishes then splitting the egg mix evenly over it and stirring together.
  4. Smooth down ingredients so the egg mix covers everything then sprinkle remaining cheese on top. If you've set aside tomato slices or sprigs of tarragon to decorate top add those too.
  5. Cook for approximately 30 minutes at 350°F or until eggs have set.
  6. Will make 2-4 servings. We had it as a stand alone meal for 2 but could feed more easily if paired with sides.

Traditionally, quiche has a crust and a frittata does not (unless you are making crustless quiche, of course). Frittatas are first cooked on the stovetop and finished in the oven, whereas quiches (like this crustless quiche) are baked entirely in the oven. Quiche combines milk (or cream) and eggs; frittatas often use only eggs. Crustless quiche is an easygoing, infinitely adaptable way to feed a hungry crowd or prep an entire week of breakfasts all at once. The simple custard of eggs and milk can hold any flavor combination you can imagine, and is a simple way to use up whatever's already in your fridge (that frozen butternut squash and spinach, maybe?).
