Adding in chia seeds, kale, bacon and eggs makes it nutrient dense and very satisfying! In a small pot, combine oats and water or nut milk, and bring to a boil. Once boiling, turn to medium-low and cook until the oats begin to thicken. Remove from heat, stir in additional add-ins, and serve.

Instructions to make Cauliflower Oats:
  1. Combine cauliflower rice, unsweetened milk, protein powder in pot on stove and cook to boil then on low/medium for about 10 minutes until it all thickens and cauli is to your liking (I like a little more firmed rice, but cook longer for more soft riced “oatmeal”.
  2. Toppings - I add a bit of honey/maple syrup, more cinnemon on top, and definitely a scoop of peanut putter and fruit. Can use frozen fruit or fresh.
  3. For more fiber add chia, flax or zen basil seeds

Once boiling, turn to medium-low and cook until the oats begin to thicken. Remove from heat, stir in additional add-ins, and serve. Steam an entire bag of Trader Joe's cauliflower rice, pour into a Pyrex dish, and mash with a fork until it is no longer super chunky. Store the cauliflower in the Pyrex dish to add to your oats throughout the week. Low-Carb Cauliflower Oatmeal is a creative, low-carb, grain-free spin on traditional oatmeal.
