  1. Make ready 1.5 kg oxtail (fat trimmed)
  2. Get 1 Tbs cracked pepper

  4. Take 2 tsp chilli flakes

  6. Prepare 1 brown onion roughly chopped
  7. Get 2 tomato cut in to 4 or 8 pieces
  8. Prepare 2-3 potato cut in to 3 or 4 pieces
  9. Take 500 g Pak choy
  10. Take 4 bay leaves
  11. Prepare 4 cardamom seeds
  12. Get 4 cloves
  13. Get to taste salt
  14. Take enough water to cover meat

Oxtail has become very popular again recently, after languishing for a while at the bottom of the butcher's list. Place celery, garlic, tomato paste, bouillon cubes, and water into a large Dutch oven; stir until the tomato paste has dissolved. Add peppercorns and bay leaves, place over medium heat and bring to a simmer. Rinse oxtails and dry well with paper towels.

Steps to make Oxtail stew:
  1. Trim fat off oxtail
  2. Heat 2 Tbs of vegetable oil to a large pot. add bay leaves, cloves & cardomon. Stir till fragrant.
  3. Add pepper, 1/2 the chilli flakes and the oxtail. Brown the oxtail do not fully cook.
  4. Add all ingredients to pot and add enough water to cover everything.
  5. Bring to boil and let simmer for 2-3 hours. Till meat is tender.

Add peppercorns and bay leaves, place over medium heat and bring to a simmer. Rinse oxtails and dry well with paper towels. Heat a small amount of vegetable oil in a large heavy stewing pot. Brown oxtail pieces in small batches, adding more oil to the pan between batches if necessary. Hold browned pieces on the side.
