  2. Make ready 1 1/2 Tbsp lemon juice

  7. Take 1/2 tsp baking soda

Steps to make Beignets:
  1. Add the lemon juice to the milk and let sit for 5 minutes
  2. Combine the milk mix with the hot milk, then add the yeast and sugar. Whisk it all together and see it aside for about 10min to let the yeast activate.
  3. Combine the flour, baking soda, and salt in a mixing bowl. Give it a stir, then add milk mixture.
  4. Using a dough hook, or wooden spoon, mix for about 3-4 minutes, or until you have a tacky dough. Then cover the bowl in cling film or a damp tea towel and let sit for 1hr
  5. Once it's doubled in size, dump it onto a well floured surface
  6. Roll out and trim into small rectangles to form the Beignets. I used a pizza cutter which worked really well
  7. Heat a pot of cooking oil to 180c (350 f) and place the beignets into the oil. If you're lucky they'll turn themselves, but if not turn them with a spoon
  8. Remove and drain on a rack with paper towels
  9. Dust with lots of icing sugar, and I love mine with my passionfruit curd. I've done a recipe for that too. You've gotta try it

Okay, that's being a little dramatic, but it's ridiculous that they have been. A traditional New Orleans-style recipe for their famous beignets! Grab a cafe au lait and you're set! Beignets only have a single rise, unlike doughnuts, which have a second rise after they are cut out. Instead, beignets go from the initial rise to cutting and frying in pretty quick succession.
