  1. Prepare Bread dough
  2. Prepare 140 g bread flour
  3. Take 25 g powdered sugar

  13. Take 25 g beaten egg
  14. Take 70 g APF
  15. Prepare 10 g cornstarch
  16. Make ready 1/4 tsp baking powder
Instructions to make Melon pan:
  1. Cookie dough first: combine unsalted butter and powdered sugar, then incorporate the egg. Add in the dry ingredients sifted together. Do not overmix. Form into a cylinder, cover in plastic and chill.
  2. For the bread, combine ingredients wet to dry, witholding the butter.
  3. Knead the dough, incorporating the butter completely. Form a ball, cover and let rest in your mixing bowl for 40 minutes.
  4. Poke a hole, then form a cylinder and divide into five equal pieces. Preshape into balls and rest 20 minutes.
  5. Take out the cookie dough and divide into five. Roll each out into a 9cm circle.
  6. Shape each dough ball into a round, wrap the top with the cookie. Score through the cookie using a rocking motion with a bench scraper or a bread knife
  7. Dip the top in granulated sugar
  8. Cover and let rise for 40 minutes
  9. Bake in a preheated 170 degree Celsius oven for aroung 12 minutes.
