  16. Take cups Sour Yogurt -2
  17. Take Gram flour (besan) -1/2 cup
  18. Get 1 tsp Turmeric powder-
  19. Make ready tsp Coriander powder-1
  20. Prepare tsp Red chilli powder -1
  21. Prepare 1 tsp Garam masala powder
  22. Get to taste Salt
  23. Prepare 2 tbsp Oil
  24. Make ready tsp Fenugreek seeds (methi dana) -½
  25. Make ready 1/2 tsp Cumin seeds
  26. Make ready tsp Mustard seeds(Rai) -½
  27. Make ready 1-2 Dried red chillies broken

Punjabi Kadhi Pakora dish is quite richly flavored with an assortment of spices ranging from cloves and cinnamon to fenugreek and coriander seeds. The pakoras are an added attraction that make the kadhi thoroughly irresistible. Serving Ideas: Punjabi kadhi pakora and chawal (steamed rice) is a delicious wholesome meal when served with vegetable salad, papad and glass of sweet lassi. It can be also served with tandoori roti, choice of vegetable curry and lassi for stomach filling dinner.

Steps to make Punjabi Kadhi Pakora:
  1. Pakora- For the pakore, take all the ingredients in a bowl and mix. - Add about one-fourth cup of water and mix well. - Heat sufficient oil in a wok.
  2. Drop small portions of the mixture into the hot oil and deep-fry till golden brown. Drain on absorbent paper and set aside.
  3. Kadhi-For the kadhi, whisk the yogurt well. Add the gram flour and whisk thoroughly till smooth. (If the curd is not sour then add 1 tbsp of lemon juice to curd and leave outside for an hour).
  4. Add turmeric powder, salt, coriander powder, chilli powder and 4 cups of water and mix well. - Heat the oil in a heavy bottomed deep kadai. Add the fenugreek seeds, cumin seeds and mustard seeds. Let them crackle.
  5. Add the ginger and sauté for a minute. - Stir in the yogurt mixture, bring to a boil and cook on low heat for about 25-30 minutes, stirring occasionally.
  6. Now add fried pakoras and cook on low heat for another fifteen minutes. - Just before serving temper it with tadka(ghee, crushed coriander seeds, cumin, mustard seeds - ¼th tsp each & whole red chillies- optional).

Serving Ideas: Punjabi kadhi pakora and chawal (steamed rice) is a delicious wholesome meal when served with vegetable salad, papad and glass of sweet lassi. It can be also served with tandoori roti, choice of vegetable curry and lassi for stomach filling dinner.
