Add the spinach along with salt and pepper to taste. Leaving the heat on medium, the spinach will take a while to cook. Stir frequently for the first five minutes or so to prevent the spinach from sticking to the bottom of the pot. Place spinach in large microwaveable bowl.

  1. Preheat oven to 350°. Melt butter in a large saucepan over medium heat.
  2. Add onion and cook until soft, about 5 minutes. Stir in spinach, artichoke hearts, cream cheese, sour cream, 3/4 cup Monterey Jack, 3/4 cup parmesan, Tobasco, and salt. Stir until well blended and heated through.
  3. Pour mixture into a 1 1/2 quart casserole dish and top with remaining 1/4 cup Monterey Jack and 1/4 cup parmesan cheeses. Bake until cheese starts to brown, about 10 minutes
