  2. Make ready 1 yellow onion, diced

  12. Make ready 3 C. Cooked chicken, shredded
  13. Get 1 (15 oz.) Can of cannellini beans, drained and rinsed
  14. Make ready 1/2 C. Cilantro
  15. Take 1/4 C. Water
  16. Make ready 1 lime
  17. Make ready Topping:
  18. Prepare Cilantro (optional)
  19. Get Hot sauce (optional)
  20. Get Crispy corn chips
  21. Get 10 small corn tortillas, cut into 1/4 inch strips
  22. Make ready 2 Tbsp. Olive oil
  23. Make ready 1 tsp. Salt
  24. Make ready 1 tsp. Sugar
  25. Take 1 tsp. Chili powder
Steps to make Green Chicken Chili:
  1. Preheat oven to 400°F. Place tortilla chips onto a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt, sugar, and chili powder. Toss to coat. Bake for 15 minutes stirring once half way through. Remove and let cool.
  2. In a large pot heat olive oil over medium heat. Add onions, green peppers, corn, and garlic. Saute 5 minutes until vegetables are tender.
  3. Add roasted green Chile's to the pot along with cumin, paprika, salt, and pepper. Mix and cook 3-4 minutes.
  4. Add shredded chicken and chicken stock. Bring to a low simmer for 5 minutes.
  5. In a blender or food processor and drained and rinsed beans, water and cilantro. Blend until the mixture becomes a paste. Add to the chili and stir until has slightly thickened.
  6. Add lime juice and garnish with cilantro and hot sauce if desired. Top with crispy tortilla strips.
