The ingredients needed to make Patatas a La Riojana:
  1. Make ready 3 garlic cloves
  2. Take dash olive oil
  3. Get 1/2 onion
  4. Prepare 4 potatoes
  5. Take 15 slice chorizo
  6. Prepare tsp Pimenton dulce (Paprika). not smoked.
  7. Make ready 1 boiling water
Steps to make Patatas a La Riojana:
  1. Peel your potatoes and cut into bitesize pieces (Spanish secret is to cut 80% and then break off the last part of each piece, adds flavour apparently). Then get pan. Use large/deep saucepan.
  2. Heat a few dashes of olive oil and add chopped garlic. (Medium heat not to burn garlic) 1 min
  3. Take half an onion and separate the layers. Add to the pan whole and stir. 3 mins
  4. Take chopped potatoes (bitesize pieces) and add to pan. Fry for 3 mins, stirring regularly. Add the pimentón dulce.
  5. Add the slices of chorizo sausage (as much as you want). Fry for 1 mins.
  6. Add boiling water until ingredients are just covered. Place on high heat to simmer. Leave 15-20 mins. Reduce heat as water reduces. Stir occasionally
  7. check potatoes are cooked. (Should fall apart easily once you remove from pan) . Add salt and pepper to taste. remove from heat and cover to let it settle 5/10 mins.
  8. Serve in bowl with a spoon. Add some nice bread to dip.
