Combine egg and milk together in a small bowl, mix well. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture. Remove with a slotted spoon and drain on a paper towel-lined plate. When a battered piece of squash is submerged in hot oil, the outside coating rapidly fries and creates a delicious crust for the vegetable underneath.

  1. Make ready 3 large yellow squash, sliced 1/2 inch circles
  2. Take 1 cup AP flour
  3. Make ready 1 cup Cornmeal (not cornmeal mix)
  4. Prepare 1 Salt, pepper, onion and garlic powders, paprika
  5. Get 2 Eggs, beaten with a splash of water

How to make fried yellow squash Wash and dry the squash, then slice off and discard the ends. Dip the sliced squash in the egg wash, then coat with the bread crumb mixture. Place on a parchment paper lined baking sheet. Continue until all squash is well coated.

Instructions to make Fried Summer Squash:
  1. Combine flour, cornmeal and seasonings in one dish and the beaten eggs and splash of water in another dish.
  2. Heat a large skillet with about a half inch of oil in it on medium heat.
  3. Dredge the squash first in the flour then into the egg then back into the flour. Shake off excess and and let the coating sit for a minute. Fry in single layer. Fry for a few minutes on one side then the other until golden brown. Drain on paper towels and sprinkle with extra salt.

Place on a parchment paper lined baking sheet. Continue until all squash is well coated. Made of fresh summer squash, fried squash makes a perfect side dish! Growing up, I looked forward to the summer for many reasons. Being able to sleep later, no school work, trips to the mountains or to the beach, and fresh summer vegetables.
