  3. Once noodles are soft, remove eggs and peel and put aside. Stir noodles. If it has too much broth you can strain to your desire (optional) slice eggs in half. Add to the top of the noodles. Garnish with parsley.
  4. Enjoy!

We make it by simmering pork trotters, chicken backs, and pork fat back for hours and hours until their collagen is extracted and turns to gelatin. We chop the pork fat into tiny pieces to add to the finished soup, as if it wouldn't be porky enough anyway. The consistency is pretty soft, we can imagine this would be the perfect comfort food if you were having a busy day selling millions of dollars of makeup, or just didn't want to do too much cooking after, you know, like, your normal day job. The toppings for Ramen are up to you, I recommend something crunchy (shredded carrots and peppers), something creamy (soft boiled egg) and something spicy (Sriracha).
