  1. Chop the vegetables for the mirepoix into small cubes.
  2. Put the potato in a pan of boiling water. Bring back to the boil, turn down to simmer vigorously with the pan lid on. After 15 minutes or when soft: drain the potatoes; add the milk; mash until smooth. Put into a microwaveable bowl and set aside.
  3. Whilst the potatoes are cooking microwave the onion for 5 minutes. Put in a large lidded pan on high heat sprayed with Spray2Cook and add the onion to the bubbling Spray2Cook. When the onion starts to fry turn the heat down to a simmer for 3 minutes stirring often to avoid it sticking or browning. Add the beef stock (hot), black pepper and onion powder and turn the heat back up. Bring to the boil then leave to gently simmer.
  4. Mix the ingredients for the mirepoix spraying with Spray2Cook as this is done - microwave for 4 minutes. Stir in a little of the stock from the onion pan then microwave for a further 4 minutes. Stir in a little more of the stock then microwave for another 4 minutes.
  5. The cooking of the mirepoix should be done whilst cooking the sausages, which should be first, pricked all over with a fork. Broil / Grill the sausages until they are browning on all sides and cooked through. Add the sausages to the onion and stock mixture. Continue to simmer for at least 10 minutes. Put the mirepoix into a hand blender beaker and, if necessary, add a little more of the stock from the pan. Blend thoroughly and stir into the contents of the pan. Continue to simmer until…
  6. Microwave the potato, stirring after every 30 seconds, until warm. Serve the potato and the sausages on warm plates and pour the onion gravy over the potato.
